Spring Salad Recipe: Packed with Protein & Healthy Fats

Each season provides different foods that give us exactly what we need, when we need it, benefitting gut health, immunity, metabolism, hormone health and so much more.
The ancient wisdom of Traditional Chinese Medicine also guides us to focus on caring for different organs each season, and Spring is all about the liver and gallbladder.
Check out how the ingredients in this salad provide important seasonal nutrition:
- Rocket: Bitter greens like rocket aid in the secretion of digestive juices and bile production, improving digestion and promoting detoxification.
- Sardines: One of nature’s best sources of omega 3s, which help improve brain and joint health, and deeply hydrate the body. Sardines also provide selenium, which plays a crucial role in thyroid function, and are a great source of immune-regulating vitamin D.
- Apple: The high fibre content protects the liver, whilst also providing anti-inflammatory properties. Apples are also a great source of quercetin, which can help reduce symptoms of seasonal allergies.
- Radish: High in vitamin C and antioxidants, radish protects liver cells and boosts liver cell regeneration.
- Raw cheese: unpasteurised cheese holds on to important enzymes and delicate nutrients that pasteurised cheese may have lost. It also provides the body with iodine, calcium and essential fat-soluble vitamins A, D, E and K.
- Broccoli: High in vitamin C and one of the best foods for regulating hormone balance, broccoli helps the body metabolise estrogen, preventing estrogen dominance.
Ingredients:
• 1 large handful rocket leaves
• 1 tin sardines
• ½ apple, sliced
• 3-4 radishes, thinly sliced
• Roughly 2 tbsp grated raw cheese
• 3-4 broccoli spears
Method
Assemble everything in a bowl, dress with oil and vinegar and enjoy!
